Thai Beef Salad

This is such a yummy recipe. I made it last night but for the life of me I can't remember whewre I got the recipe from. But it is great because even the kids can eat it as it is not hot much at all, it just has the flavour of the chilli.

Thai Beef Salad

500g beef rump steak, trimmed
2 lebanese cucumbers (seeds scooped out)
5 roma tomatoes
160g bean sprouts, trimmed
1 Tbsp small, fresh mint leaves

Thai dressing

1/4 cup sweet chilli sauce
1 Tbsp lime juice
1 Tbsp fish sauce
1 clove garlic, crushed
2 Tbsp chopped fresh coriander
1 Tbsp chopped fresh mint leaves

1. Brush beef with 1/4 cup of the thai dressing. cover, refrigerate for several hours or overnight (I just spread it on while it was cooking in the pan)

2. Cook beef in heated, oiled pan until browned on both sides and cooked as desired. Remove from heat, cover and stand for 10 minutes before slicing thinly. Meanwhile, halve cucumbers lengthways and scoop out the seeds. Slice thinly. Cut tomatoes .

3. Just before serfving toss beef in a bowl with the vegies and remaining dressing. Sprinkle with mint leaves.

You could serve this with couscous to bulk it out too.

YUM Suse! I SO wish we could eat it but half of the ingredients we can't eat at the moment but maybe I'll be able to cook it one day :) Thanks for sharing :)

Looks very nice Suse, I do like a warm beef salad & I like this mix of salad vegies
